Open Face
Any ideas for open face sandwiches?
Just about any hot sandwich is suitable for an “open face” version. Here are two of my favs (all original, as far as I know):
COLD:
Caprese Moderne (Kah-praiz-eh Mah-dare-neh):
Ingredients: 1 slice of sourdough or crusty Italian bread; 2 slices of fresh mozzarella cheese (Buffalo Mozzarella is the best; available at gourmet/specialty stores); 2 Tbsp. fresh sweet Basil, chiffonade; 2 slices tomato (heirlooms/organic are best); 2 Tbsp. Whole Milk Ricotta cheese; salt and freshly ground pepper to taste
Process: Spread ricotta on bread, sprinkle with salt & pepper, layer mozzarella-1 Tbsp. basil-tomato-1 Tbsp. basil. Drizzle with Extra Virgin Olive Oil and/or Balsamic Vinegar (optional). Toast under broiler if desired (keep an eye so it doesn’t burn!).
HOT:
Croque Moi (Croak Mwah)…Francophones will get this:
Ingredients: 2 slices Rye, Pumpernickel, or other dark variety bread; 2oz. sliced deli ham; 2oz. sliced deli turkey; 2 oz. sliced deli roast beef; 3oz. Gruyere cheese (swiss will do); 3oz. Brie or Camembert cheese; 2 Tbsp. butter; 1 egg, lightly beaten
Process: Heat skillet over medium heat with butter; coat bread slices with egg and place in hot skillet until both sides are toasted (flipping mid-way through); take toasted slices and layer as follows: 1 slice bread, 1oz brie, 1oz gruyere, 1oz ham, 1oz turkey, 1oz beef–1 slice bread, 1oz ham, 1 oz turk, 1 oz beef, 1oz gruyere, 1oz brie; place in toaster oven or regular oven (350 degrees preheated) until cheese melts.
